I don’t know why regular meatloaf never felt that exciting to me, but make it in a muffin pan, pile mashed potatoes on top, and suddenly I’m obsessed LOL. These Mini Meatloaf Muffins are basically little savory cupcakes, and they’re such a fun way to turn a classic comfort food into something everyone actually gets excited about.
And I have a little trick I use whenever I make ground beef recipes that makes the inside SO soft and tender – just 1/2 teaspoon of baking soda. It sounds almost too simple, but it makes such a difference. You HAVE to try this one!

Why Meatloaf Muffins Instead of Traditional Meatloaf?
I actually love making meatloaf in a muffin pan instead of one big loaf. The smaller size means you get more of those browned, slightly crispy edges in every serving, while the inside stays soft and juicy. They also cook much faster than traditional meatloaf, are already divided into individual portions, and you get to pile mashed potatoes on each one like frosting. It’s basically all the best parts of meatloaf, just easier and way more fun to serve.

Instructions
- Preheat the oven to 350°F and lightly grease a standard 12-cup muffin pan.

- Preheat the oven to 350°F and lightly grease a standard 12-cup muffin pan.
- Add the ground beef, grated onion, carrots, panko, eggs, ketchup, Parmesan, garlic powder, oregano, thyme, baking soda, salt, and pepper to a large bowl. Gently mix everything together just until combined.
- Divide the mixture evenly between the 12 muffin cups. Gently press it into each cup without packing the meat too tightly.

4. Bake for about 15–25 minutes, or until the meatloaf muffins are cooked through and reach 160°F (71°C) in the center.
5. While they bake, peel and chop the potatoes. Boil or steam until tender, then drain well. Add the butter and 1/2 cup milk and mash until smooth, adding more milk as needed. Keep the mashed potatoes creamy but thick enough to hold their shape on top.
6. Let the muffins rest for a few minutes, then carefully remove them from the pan and transfer them to a serving platter before adding the ketchup and mashed potatoes.
7. Add a little ketchup to each meatloaf muffin, then spoon or pipe the mashed potatoes on top.
8. Sprinkle with parsley if you want and serve warm.
Quick Tips
- My secret ingredient is baking soda. I add 1/2 teaspoon to the meat mixture, and it makes such a difference. I use this trick in pretty much all of my ground beef and meatball-style recipes because it helps the inside stay super soft and tender instead of getting dense.
- Don’t overmix the beef. Mix everything just until it comes together. The more you work the meat, the firmer the muffins can become.
- Don’t pack the muffin cups too tightly. Gently press the mixture into the pan rather than really pushing it down. This also helps keep the inside nice and tender.
- Grate the onion instead of chopping it. You won’t get big pieces of onion, and all that onion juice mixes right into the beef, adding extra moisture and flavor.
- Keep the mashed potatoes a little thicker than usual. If they’re too soft, they’ll slide right off the muffins. Add the milk gradually until they’re creamy but still thick enough to hold their shape.
- For a browned potato top, give them a quick broil. After adding the mashed potatoes, pop the muffins under the broiler for a couple of minutes until you get those little golden edges.
- Add a little Worcestershire sauce. One tablespoon is enough to give the meatloaf muffins a deeper, more savory flavor without really tasting like Worcestershire sauce. It’s such an easy little addition, but it makes the beef taste so much better.

How to Store and Reheat Leftovers
Store leftover meatloaf muffins in an airtight container in the fridge for up to 3–4 days. I actually prefer reheating them in the oven at 325°F, covered loosely with foil, until they’re hot all the way through. This helps keep the beef from drying out. You can also freeze the cooked meatloaf muffins without the mashed potato topping for up to 2–3 months. Just thaw them overnight in the fridge, reheat until they reach 165°F in the center, and add freshly made mashed potatoes on top.

And that’s it! These mini meatloaf muffins are such a fun little twist on a classic dinner, and I love how the mashed potato topping makes them look like savory cupcakes. They’re easy enough for a weeknight dinner but also cute enough to serve when you have people over. And seriously, don’t skip the baking soda trick! If you try these, let me know how they turn out. I’d love to hear what you think!
