Healthy Apple & Carrot Muffins for Breakfast

This is a quick and easy apple and carrot muffins recipe for breakfast!
Here is what you need:
INGREDIENTS
- 1/2 cup buttermilk
- 1/2 cup canola oil
- 1/2 tsp baking soda
- 2 eggs
- 1 1/4 cups all-purpose flour
- 1/3 cup unsweetened smooth applesauce
- 2 cups shredded carrots (about 5 medium carrots)
- 1 cup shredded apple
- 1 cup rolled oats + a couple of extra tablespoons for topping
- 1 1/2 tsp baking powder
- 1 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 tsp pure vanilla extract
How to make these morning apple and carrot Muffins?
DIRECTIONS
- Place the rack in the center of the oven, and then preheat to 375F. Line a 12-cup muffin pan with paper liners.
- In a large bowl, whisk the flour with baking soda, baking powder, cinnamon, and salt.
- Then in a medium bowl, whisk eggs in oil, buttermilk, sugars, applesauce, and vanilla.
- Stir egg mixture into flour mixture.
- Add apple, carrots, and rolled oats to the mixture while stirring. Do not over mix.
- Scoop into lined muffin cups.
- For about 18 to 20 minutes, bake until a skewer inserted into the center of a muffin comes out clean.
