These mini cucumber sandwiches are one of my favorite easy appetizers when I want something fresh, pretty, and simple to make. They’re made with soft white bread, crisp cucumber, and a creamy dill filling, then cut into cute little bites that look lovely on a serving platter. They take just 20 minutes to prepare and are perfect for brunch, baby showers, afternoon tea, or any party where you want something light and delicious.
Ingredients
Servings: 18 · Prep: 20
- 1 English cucumber
- 6 slices soft white sandwich bread, crusts removed or no crust bread like this one
- 1/2 cup cream cheese, softened
- 1/4 cup mayonnaise
- 1 teaspoon mustard
- 1/2 teaspoon dried dill
- 1/2 teaspoon soy sauce
- Fresh dill for garnish
- Pinch of black pepper
- Salt

Instructions
- Cut the cucumber into thin, lengthwise slices about the same length as the width of your bread. Sprinkle them lightly with salt and let them sit on paper towels for about 10 minutes.
- Mix the cream cheese, mayonnaise, mustard, dill, soy sauce, and black pepper in a small bowl until smooth and creamy.
- Pat the cucumber slices really well with paper towels to remove as much moisture as possible. This little step helps keep the sandwiches from getting soggy.

4. Spread the cream cheese mixture on one side of 2 bread slices. Arrange a layer of cucumber on one slice, then place the other slice on top, cream cheese side down.
5. Spread more cream cheese mixture on top, add another layer of cucumber, and cover with a third slice of bread spread with cream cheese on the bottom side. Repeat with the remaining 3 bread slices.
6. Cut each stack into 6-9 little sandwiches using a sharp knife. Add a cocktail toothpick to each one, garnish with fresh dill and serve right away.

Quick Tips
- Salt the cucumbers first. Sprinkle the cucumber slices lightly with salt, let them sit for about 10 minutes, then pat them really dry. This pulls out extra moisture so your sandwiches don’t turn soggy.
- Freeze the bread for a few minutes before assembling. I LOVE this little trick from the comments. Slightly firm bread is much easier to spread with cream cheese without squishing or tearing it, especially when you’re making tiny sandwiches.
- Create a cream cheese barrier. Make sure the cucumber isn’t sitting directly against bare bread. A thin layer of the cream cheese mixture between the bread and cucumber helps protect the bread from the cucumber moisture.
- Try a few drops of rice vinegar. A little rice vinegar, cracked pepper, and fresh dill can give the cucumber extra flavor. Just pat the slices dry before assembling so the bread doesn’t get soggy.
Final Thoughts
These mini cucumber sandwiches are one of those easy appetizers that look so cute on a serving platter without taking much effort. I love the combination of crisp cucumber, soft bread, and creamy dill filling, especially for brunch, baby showers, afternoon tea, or spring parties. Just remember to dry the cucumbers well and assemble them close to serving time so every little sandwich stays fresh and delicious!
