Easy Chocolate Muffins Recipe

This is a quick and easy chocolate muffins recipe!
Here is what you need:
INGREDIENTS
- 2 large eggs
- 175ml milk
- 75g plain chocolate chunks + a couple of extra tablespoons for topping
- 250g self-rising flour
- 25g cocoa powder
- 2 tsp baking powder
- 175g caster sugar
- 100ml mild olive oil or sunflower oil
- 1-2 tsp vanilla extract
How to make these basic chocolate Muffins?
DIRECTIONS
- At 170C, preheat the oven.
- Neatly arrange a 12-hole deep muffin tray with paper muffin cases.
- Whisk together the flour, cocoa, and baking powder.
- Add the sugar to the mixture along with the remaining ingredients and mix lightly together.
- Scoop the mixture into the prepared cases.
- For approximately 20 minutes, leave in the oven to bake or until golden and springy to the touch.
- Leave to cool for 10 minutes, then transfer to a wire rack and leave to cool completely.
