Basic Chocolate Muffins

Ingredients

  • 2 large eggs
  • 175 ml milk
  • 75 g plain chocolate chunks + a couple of extra tablespoons for topping
  • 250 g self-rising flour
  • 25 g cocoa powder
  • 2 tsp baking powder
  • 175 g caster sugar
  • 100 ml mild olive oil or sunflower oil
  • 1-2 tsp vanilla extract

Instructions

  • At 170C, preheat the oven.
  • Neatly arrange a 12-hole deep muffin tray with paper muffin cases.
  • Whisk together the flour, cocoa, and baking powder.
  • Add the sugar to the mixture along with the remaining ingredients and mix lightly together.
  • Scoop the mixture into the prepared cases.
  • For approximately 20 minutes, leave in the oven to bake or until golden and springy to the touch.
  • Leave to cool for 10 minutes, then transfer to a wire rack and leave to cool completely.
